To usher football season back in, here is a great game day meal that’s nice and easy. Perfect for a lazy weekend day! This chili is very hearty and filling. I loved the aroma of it cooking all day and it was delicious when we were finally able to eat it!
This yummy chili is packed with veggies and chicken and is bursting with flavor! I love spicy foods and this was just right for my taste. If you don’t like spicy food then feel free to adjust the amount of buffalo sauce you add! Also, make sure you use Franks Buffalo Sauce!! Other sauces just don’t offer the same kind of flavor that you need to make this so tasty.
Without further ado, here’s the recipe!
Buffalo Chicken Chili
Serves 7 generous portions
2 pounds boneless skinless chicken breast
1 large onion, chopped
2 cloves garlic
1 cup celery, chopped
1 cup carrots, chopped
1 28oz can diced tomatoes
1 6oz can tomato paste
1 15oz can black beans, drained and rinsed
1 15oz can chickpeas, drained and rinsed
4 cups chicken broth
1oz package or ranch seasoning (look for no-msg)
1/2 of a 12oz jar Franks Buffalo Sauce
Low fat crumbled blue cheese, optional
Combine all ingredients except buffalo sauce and blue cheese in the crockpot. *
Cook on low for 8 hours
Remove chicken and shred with 2 forks. Add back to crockpot.
Add buffalo sauce and stir until mixed well.
Serve hot and topped with blue cheese!
*If you add the buffalo sauce before cooking, you won’t be able to taste it. So add it in at the end!
