This salad is so yummy! It’s the perfect blend of flavors from the peppery arugala to the sweet peaches to the crunchy pecans to the savory blue cheese. Shew! I believe I could eat it every day and be perfectly happy.
I think salads freshen up a meal. If I have meat and carbs on my plate, I really need some light veggies to balance it all out. And then there are days when I just want the salad; none of the other heavy stuff. So whether you use this as a side salad or an entrée salad, you won’t be disappointed!
Peach Arugula Salad
Makes 2 entrée salads or 4 side salads
6 cups arugula
3 medium peaches, peeled and chopped
1 tbsp diced shallots
3 tbsp reduced fat crumbled blue cheese
3 tbsp chopped pecans
3 tbsp balsamic vinegar
1.5 tbsp extra virgin olive oil
1.5 tbsp honey
In a large bowl, toss arugula, peaches, and shallots.
Top with blue cheese and pecans.
In a medium bowl, add vinegar, olive oil, and honey. Whisk together.
Drizzle salad with the balsamic vinegar mixture.
