Even though I am pretty good at planning meals and having an idea of what I’ll be eating for my next meal, there are times I find myself hungry and with nothing to eat. This happened to me last Sunday. We left church, were starving, and debating the idea of grabbing something “quick”, which as you know “quick” doesn’t always mean healthy. That particular day I was feeling strong so instead of caving in and grabbing unhealthy food, I ran to the grocery store not knowing what I was going to buy. I figured it out pretty quickly and we were at home and eating within 30 minutes. That is how these Weeknight BBQ Chicken Lettuce Wraps came to be!
This would be a super fast dinner to throw together on weeknights, or even weekends. It’s not much of a recipe, but this is how I put it together!
Weeknight BBQ Chicken Lettuce Wraps
Serves 2-4 (depending on if you are serving it with sides)
2 1/2 cups chicken breast, pulled from store bought rotissorie chicken
1 cup of your favorite bbq sauce
8 small/medium Bibb Lettuce leaves, washed and dried well
1/4 cup thinly slice red onions
Place pulled chicken in large bowl, add bbq sauce, and heat in the microwave until hot (about 2-3 minutes)
Fill each lettuce wrap with about 1/3 cup bbq chicken.
Top with Onions.
